CASPER, Wyo. –– A popular fast casual Mexican restaurant based in Casper will be expanding to a new location in Riverton. Poncho’s Mexican Food owner Fernando de la Torre told Oil City News that they plan to open the new Poncho’s in Riverton in the next couple of months.
