The Michelin Guide announced its demotions for 2026. Chef Sébastien Bras loses a star at the Suquet in Laguiole, while Ambrosie in Paris leaves the three-star restaurant club.
"This year, there are few downward assessments, reflecting a form of resilience at the highest level," said Michelin's International Director.
The demotion of Sébastien Bras' restaurant, Le Suquet, in Aveyron, is the ultimate turnaround of an almost ten-year-old soap opera for this chef who never stopped asking to be removed from the guide so as not to be pressured.
One restaurant goes from three to two stars, two lose their second star and 17 lose their only star.
The Michelin guide announced on Tuesday his demotions for the 2026 edition, marked notably by the loss of a star for Sébastien Bras and the change from three to two stars of the Parisian restaurant L的Ambroisie
Set in Place des Vosges, the restaurant offers a menu that honors French gastronomy.
