The efficacy of extra virgin olive oil (EVOO) on cholesterol depends on phenolic concentration according to a new study conducted in Greece. The research team compared the effects of different phenolic concentrations in two different EVOOs that had that same polyphenol content, concluding that "the concentration and bioavailability of polyphenols are more important than the absolute lipid quantity consumed".
