The idea for Grafton’s Uncommon Cow—a cafe located in the heart of town, serving up ice cream, coffee, and breakfast food—was conceived when Lori and Steve Belfiore started selling a New Hampshire-based ice cream at their restaurant, Grafton Grill and Crust. “From there, we started throwing around the idea of an ice cream food truck because we love ice cream, and the food truck business was on the rise,” Lori said.
