Fare With A Flair: Sheet pan souvlaki tasty, with easy clean-up

I can distinctly remember the first time I had souvlaki. It was from one of London’s first food trucks and I marvelled at the wonderful flavour of lemon, oregano, garlic and more that permeated the tender meat. Back then a “pita” was a relatively unknown flatbread, and tzatziki also was "novel.”
